TASTY TUESDAY: Cranberry Apple Crisp

November is here and we couldn't be more excited. It is officially holiday season and we are so excited to bring to you some of our favorite holiday treats. First up, we have this yummy Cranberry Apple Crisp. A warm, fruity, crunchy combination topped with a few scoops of vanilla ice cream, has our taste buds skipping!

Cranberry Apple Crisp

Prep Time 25 min                Bake Time 50 min
Yields 3-4 servings

Ingredients

Filling

6 medium/large apples (I used a mix of Mcintosh, Granny Smith and Honey Crisp)

1 cup fresh cranberries (not frozen)

1 tsp orange zest

1 cup dark brown sugar

1 tsp cinnamon

1/4 tsp nutmeg

1/4 tsp ginger

1/4 cup cornstartch

1 tsp pure vanilla extract

1 tbsp of melted butter

Crisp Topping

1 cup all purpose flour

1 1/2 cups rolled oats

1 cup dark brown sugar

1 tsp cinnamon

10 tbsp butter, cold & cut into cubes

Directions:

Preheat oven to 350F degrees and butter a 9 or 10 inch pie dish generously.

Crisp Topping

  1. In a bowl, whisk together flour, oats, brown sugar, and cinnamon.
  2. Add the cold, cubed butter to the bowl and toss with flour mixture to coat.
  3. Work the butter in with your fingers until the butter is worked in and the texture is crumbly.
  4. Set aside until ready to use.

Filling

  1. In a bowl, whisk together cornstarch, brown sugar, orange zest, cinnamon, nutmeg and ginger.
  2. Core and slice your apples into thin slices – about 1/8 to 1/4 inch thick. Add them to the mixing bowl with your sugar mixture and stir to coat.
  3. Add fresh cranberries, vanilla and melted butter; mix until everything is evenly coated.

Pour filling into prepared pie dish, and crumble the crisp topping evenly over top of the filling.

Bake for 45-50 minutes or until the crumble is golden brown and the filling is bubbling up on the sides.

Remove from the oven and allow to cool on a wire rack for 15 minutes before serving warm with vanilla ice cream or whipped cream. Enjoy!
