Cinco De Mayo Recipe: Instant Pot Chicken Burrito Bowl

Turn the Instant Pot to Sauté.
Add olive oil and chicken breasts to the pot. Season chicken with salt and pepper. Cook until chicken is browned.
Once chicken is browned, add onions and cook until they start to soften.
Add the uncooked rice and toast uncooked rice for about 2 minutes or just until some grains start to turn golden brown.
Next, pour in the chicken broth and use your spoon to scrape up the bottom of the bowl to be sure nothing is stuck and to prevent burning.
Turn the Instant Pot off sauté.
Stir in black beans, canned tomatoes, canned corn, garlic powder, chili powder, paprika and cumin.
Lock Instant Pot lid in place and set to Manual, High Pressure for 10 minutes.
Use Quick Pressure Release, and once pressure pin drops, open Instant Pot and fluff Chicken Burrito Bowl with fork.
Garnish with avocado, cheese, sour cream and tortilla chips.
